Introduction

Ingredients

    2 lbs. mayocoba beans, rinsed and soaked
    1 pkg (4 cup) Trader Joe's Low Sodium Chicken Broth
    4 c. water
    6 Hans' All Natural Chicken Sausage:Spinach, Fontina Cheese & Roasted Garlic
    2 tsp. black pepper
    1/4 pkg. frozen spinach (more if you like)
    2 Tbsp. olive oil
    1 Tbsp. dehydrated onion flakes

Directions

Place broth, water, and beans in slow cooker and turn to low. Slice sausage into thin slices. Sautee them in olive oil and onion flakes and add the lot to the beans. Add the spinach and turn it to high, stirring occasionally to keep it from sticking to the bottom.
Makes 22 FILLING 1-cup servings.
