Introduction

A very filling dish with lots of flavour and texture. The veggise can obviiously be changed for wwhatever you fancy. If you have never tried baked feta before - it's marvellous! Ingredients

    Black olives 30gms
    Whole wheat pasta (cooked) 100 gms
    Spinach 100 gms
    Sweet red pepper 50 gms
    Asparagus 2 spears
    Garlic cloves X 2

Directions

Serves 1 as main dish or 2 as side dish.

Cook pasta as directed

Cut feta into bite size chunks - bake in the oven or cheat by grilling (broiling) until it is soft and start to turn brown

Bake or dry fry veggies

Mix altogether - serve on bed of fresh spinach.

Can be served hot or cold
