Number of Servings: 2

Ingredients

    12 oz halibut filets
    3 white rose potatoes sliced ¼ inch thick
    ½ a zucchini cut in half lengthwise then sliced ¼ inch thick
    10 snap peas
    1 lemon cut in half
    ¼ cup olive oil
    5 chives sliced

Directions

1. Put potatoes in a sauté pan cover with just enough cold water then bring to a simmer for five minutes, drain and set a side.
2. Heat a sauté pan on high heat then put in 1 tablespoon oil, cook five minutes on each side, season with salt and pepper then set a side.
3. Put in 1 tablespoon to the same pan on high heat then put in snap peas zucchini, season with salt and pepper
4. Put vegetables and potatoes on the plate then top with halibut then squeeze on lemon juice and drizzle on the rest of the oil.

    Incredible!
    I made this with fresh caught Alaskan halibut and chives and zucchini from my CSA while my parents were up here. It was delicious and they loved it. - 8/4/11
