Ingredients

    1 (10 ounce) package frozen chopped spinach, thawed and squeezed thoroughly to remove liquid
    4 eggs or equivalent egg substitute
    4 egg whites
    1 small potato - cubed & cooked
    4 tbs light sour cream
    1/2 cup grated low fat cheese
    1/4 cup finely chopped onions
    1/4 teaspoon dried Italian seasonings
    1 pinch Salt and pepper, to taste

Directions

Preheat oven to 375 degrees.

In a large bowl, whisk together all ingredients until well mixed. Spray a 9-inch pie plate with cooking spray and fill with the spinach mixture.

Bake for 30 minutes, or until browned and set. Let cool and cut in wedges and serve. Serves 8.

You can substitute the spinach for other vegetables or add more than one vegetable, and also with the cheese and spices.

    I made this today with variations. I sauteed the onion with garlic and canned corn, then added the spinach and eggs. (I didn't have potato either) I then substituted a couple of tbsp of milk for the sour cream and baked it for 30 min. delicious! - 7/4/09

    Very Good
    This was so easy to make and definitely a hit! I substituted skim milk for the sour cream and chopped up some fresh spinach instead of frozen. The only thing I would check is to add more spices. This was filling enough to eat for dinner! - 10/5/11
