Introduction

Ingredients

    Chicken breast, no bone or skin, 2 halves
    1 tbsp. olive oil, extra virgin
    1/2 cup white wine vinegar
    Green olives (large), 6 olives, chopped
    1/4 cup fresh parsley, chopped
    Salt and pepper, to taste

Directions

Heat olive oil in a skillet. Place chicken in skillet and sear both sides until browned - sprinkle with salt and pepper while chicken cooks.

Add water, white wine vinegar and olives; cover and simmer until chicken is done, around 15 minutes. Add parsley and cook another 1-2 minutes.

Plate chicken breast halves; spoon olive/wine/parsley mixture over chicken.
