Ingredients

    1 large egg
    1/3 cups all purpose flour
    2/3 cups whole wheat flour
    3/4 cup 2% milk
    1 tbs brown sugar (packed)
    2 tbs vegetable oil
    3 tsp baking powder
    1/4 tsp salt

Directions

spray skillet with non-stick spray, over medium heat. Beat egg into all the ingredients until smooth. For each pancake pour slightly less than 1/4 cup of batter to make a pancake. Cook until golden brown on both sides.

    Having read others comments, I made the following changes/additions: added cinnamon & ginger for some flavour; used a 50/50 mix of kefir & applesauce instead of milk and added a tsp of soda to make them fluffier. These were very, very good ... made a double batch and we finished them off! Yum! - 5/11/10

    not too crazy about this one. REALLY thick so I added more milk to it. They wre sort of bland. If I had berries or something to add they may have been better. - 1/24/10

    Great way to start the day. These pancakes are light and fluffy. I added blueberries and used 0 fat yogurt instead of milk with a bit of water to thin it out. They turned out wonderful. These are also great reheated in the microwave. - 1/18/09
