Ingredients

    1/4 cup butter (recipe calculated using Smart Balance 50/50 Omega Blend stick butter)
    3 cups sliced fresh peaches
    2 cups fresh blackberries
    1 cup + 1 Tbsp all purpose flour, divided
    1 cup sugar, divided
    1 Tbsp baking powder
    1/4 tsp. kosher salt
    1 cup skim milk

Directions

Prehead oven to 350. Pour 2 Tbsp melted butter into bottom of 2 quart baking dish coated with cooking spray.
Combine peaches, blackberries and 1 Tbsp flour in large bowl, toss gently.
Add 1/4 cup sugar and ginger, toss gently to combine.
Pour fruit mixture into prepared baking dish.
Spoon remaining 1 cup flour into dry measuring cup and level with knife. Add flour, remaining 3/4 cup sugar, baking powder and salt in a large bowl and whisk together. Add remaining 2 Tbsp melted butter and milk, combine with whisk. Pour batter evenly over fruit.
Bake at 350 for 1 hour and 10 minutes.
Yields 8 servings (~ 1/2 cup each).
