This is really delicious - aromatic and filling and so easy. Feel free to add more spice to taste. This is really delicious - aromatic and filling and so easy. Feel free to add more spice to taste.
Number of Servings: 2

    1 red onion, diced
    160g mushrooms, diced
320g tomatoes (approx 4 large), diced
    1 can tuna
    100g brown rice
    100g green beans
    2 tsp olive oil
    black peppercorns
    ground cinnamon
    ground cloves
    ground turmeric
    garam masala
    black pepper

Put rice on to boil with 2 or 3 cardamoms, 6-8 cloves, 6-8 peppercorns and 1/2 tsp turmeric.

Heat oil in a pan. Add dashes of black pepper, ground cloves, ground cinnamon and garam masala.

Heat spices for 30 seconds then add onions and mix.

Cook for 2-3 minutes, then add mushrooms and half the tomatoes and mix.

Cook for 10 mins until soft.

Add tuna and the rest of the tomatoes and heat through.

Five minutes before the rice is done, add the green beans to the cooking water.

When the rice is cooked, drain, pick out the whole spices if you can, and stir the rice into the tuna mixture.

I highly recommend serving this with wedges of hard boiled egg - yum!
