Ingredients

    2 cups quick cooking rolled oats
    2 cups plain fat-free yogurt
    2 cups Eagle Mills Unbleached Flour
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 cup packed light brown sugar
    1 cup unsweetened applesauce
    12 Tbsps Egg Beaters Refrigerated Egg Whites

Directions

Place oats in a bowl, add yogurt, mix well, cover with plastic and let sit for 2 hours at room temperature.

Preheat oven to 375 degrees. Grease 33 silicon muffin cups (using regular muffins cup will yield fewer muffins)

In a large bowl, stir together flour, baking powder, baking soda, salt and brown sugar. Stir in oat/yogurt mixture, add applesauce and eggs; mix well. Pour batter into prepared muffin cups.

Bake in preheated oven for 20 minutes, until a toothpick inserted into center of muffin comes out clean.
