Introduction

Although a little high on carbs, if you plan ahead, this makes a delicious dinner treat! This is a favorite of mine, and it includes shrimp and vegetables with a whole wheat pasta. Ingredients

    3 tablespoons light butter (I Can't Belive It's Not Butter Light)
    1 cup chopped green onions
    1 cup chopped mushrooms
    1 pound small shrimp
    3 cloves minced garlic (I use the minced from a jar)
    1/2 teaspoon cayenne or red pepper
    1 1/2 teaspoon salt
    3 tablespoons white wine
    1/2 pint light whipping cream
    one package of whole wheat fettuccine

Directions

While making sauce, boil water in a large pot and cook fettuccine until tender. Drain.

In large skillet, melt butter over high heat and saute onions and mushrooms until tender (2-5 minutes).

Add shrimp and saute one minute.

Add the rest of the ingredients except cream and cook until heated through (about 4 minutes).

Add cream and boil to reduce until thicker (5-10 minutes). Serve over fettuccine. Great with salad and french bread!

    I haven't made this but I would suggest using evaporated skim milk instead of the cream or half and half. I look forward to trying this soon. - 4/26/07
