Introduction

Ingredients

1.25 lbs cube steak
2 cups sliced onions
.25 cup diced red bell peppers
1/8 cup flour
3 tbls olive oil
1.25 cup 99% fat free chicken broth
1 beef bouilon cube
1 tsp salt
.5 tsp balck pepper
Directions
season the cube steaks with salt and pepper. Dredge in the flour.
Add 1 tbls oil to a hot skillet and brown half the steaks. Remove and set aside. Add another tbls oil to pan and brown the rest of the steak. Remove and set aside.
Add the last tbls of oil to the pan and add the onions and peppers. Sprinkle any leftover flour over the onions and stir a few times. Place the steaks on top of the onions and add the broth and bouillon cube to the pan. Cover and simmer for 20 minutes. Uncover and simmer for 15 minutes.
Adjust heat as you go...hot pan to brown meat, lower heat for onions,even lower heat for simmering.
Makes 4 servings, 1 piece of steak, and 1/4 of the sauce/onions/peppers.
