Introduction

I love cauliflower...and cheese. Ham adds a bit of flavor and protein. You can sub chicken and light cheese for an even lighter meal. Have one cup with a salad, or two cups if your hungrier. Ingredients

    Cauliflower, frozen, cooked, 6 cup (1" pieces)
    Velveeta Cheese Product, 6 oz
    Ham, extra lean, (5% fat), 2 cup, diced
    Mrs Dash, table blend, 1 teaspoon, or to taste

Directions

Prep time included cooking cauliflower in the microwave. Cut velveeta into chunks and dice ham. Mix together and bake at 400F for 30 minutes or until bubbly. Makes 8 1-cup servings. Serve with salad [shown].

    I don't like velveeta so I made a sauce with shredded cheddar and a bit of cream (microwaved). Very satisfying, and a great idea. - 6/30/09

    I have never been a master at gravies or sauces...but YAY YOU! I have, since writing this recipe down, cut back the amount of Velveeta cheese when I make this, heated it to melting, then added sharp cheddar to it before the oven. I love very cheesy.

    Very Good
    Very simple to make, great use for leftover ham but a one cup serving size seemed a little small. It didn't seem like there were 8 cups after everything cooked down. - 1/2/20
