Introduction
I love cauliflower...and cheese. Ham adds a bit of flavor and protein. You can sub chicken and light cheese for an even lighter meal. Have one cup with a salad, or two cups if your hungrier. SWEET-ENOUGH
I don't like velveeta so I made a sauce with shredded cheddar and a bit of cream (microwaved). Very satisfying, and a great idea. - 6/30/09

I have never been a master at gravies or sauces...but YAY YOU! I have, since writing this recipe down, cut back the amount of Velveeta cheese when I make this, heated it to melting, then added sharp cheddar to it before the oven. I love very cheesy.
