Ingredients

    2 Chicken breasts, boneless and skinless
    8 oz Pico de Gallo: Choose lower sodium varieties than the nutrition information I located for healthier eating
    1/2 cup Sour cream, fat free: Buy Naturally Yours or Tillamook for the best flavor
    Jennie-O Turkey Store Extra Lean Turkey Bacon, 10 slices
    1/4 cup Mrs Dash 10 Minute Spicy Teriyaki Marinade
    1/4 cup Mrs Dash 10 Minute Southwestern Chipotle Marinade
    Cooking spray or oil of your choice

Directions

Cut the two chicken breasts into bite-sized pieces. Put the chicken in a bowl with both Mrs Dash marinades. Place the bowl in the refrigerator to soak for 10-15 minutes. You can also place the bowl in the microwave and cook at 10% power for 10 minutes.

Cut turkey bacon into thin slices. Fry in PAM or your favorite oil. This bacon won't have enough fat to throw in the skillet alone. Put the cooked bacon aside.

Put the chicken and sour cream in the pan and cook till well done.

Toss the ingredients together. This dish can be eaten warm or cold. This dish makes approximately 4 one cup servings.

    mexican isone of our favorite dishes and shrimp can be subsituded for a more special dinner and sprinkle with a little cilantro. - 7/6/09

    Oh, thank you, how could I have left out cilantro? A whole packed cup of chopped cilantro would be a great addition to this dish. I could use 2 cups myself; that's a half cup of cilantro per serving.

    This is a really easy recipe. I have to be careful of the sodium but if I budget I can have it for dinner. - 7/8/09

    I have to eat very low sodium myself. I did 2 things to minimize this recipe's sodium content: I soaked the turkey bacon for several hours in warm water, changing the water several times. I also used store-bought pico de gallo that had no added salt. Enjoy!

    need to get some turkey bacon.. i am the only one in the family that likes it but if it is in that sauce they will never no.. lol i hide a lot in sauce that they do not know about .. - 7/2/09

    Louis Rich and Butterball also make turkey bacon, yummy. What the family doesn't know won't hurt them!
