Ingredients

8 cups lettuce
1 pound ground turkey (93% lean)
1 package taco seasoning
2 cups black beans (drained)
1 cup Monterey Cheese (shredded)
1 cup chopped tomato
8 tablespoons salsa
4 tablespoons sour cream (low fat)
2 tablespoons black olives
baked tortilla chips
Directions
Brown the ground turkey in a large skillet and add taco seasoning.
Heat and drain two cups of black beans.
Chop 8 cups of lettuce and divide onto 4 dinner plates.
Spread 1/4 of the meat over each salad.
Add 4 ounces of the taco meat to each salad.
Sprinkle 1/2 cup of black beans over the top of the meat and lettuce.
Add 1/4 cup of shredded cheese to each salad.
Add 1/4 cup of tomatoes to each salad.
Place two tablespoons of salsa in the center of the salad and top with 1 tablespoon of sour cream.
Sprinkle black olive slices over the salads.
Break the taco chips into small pieces and sprinkle them over the top of the salad to finish.
