Ingredients

2 Skinless Chicken Breasts, cut into 16 chunks
1 Sweet Onion, cut into 8 large chunks (use outer 2 layers)
1 Sweet Red Pepper, cut into 8 large chunks
8 Whole Mushrooms
4 Tbsp Italian Dressing (calculation is reg, not lite dressing)
4 Whole Cherry Tomatoes (optional)
4 Bamboo Skewers (greased)
Directions
Ladies and Gentlemen, Start Your Grills!! I use charcoal, so as that is burning, I clean and cut my veggies.
*Also, a handy tip, cut your chicken into chunks while still partially frozen. It's easier to trim and work with. I then marinated my chicken in italian dressing for an hour while it completely thawed.*
Grab your skewers, greased with olive oil or smart balance or whatever, and begin assembling the kabobs. My order for these was Mushroom - Onion - Chicken - Pepper - Chicken, Repeat. If using tomatoes DO NOT put them on yet.
Once the grill is ready, put on the kabobs and baste with the italian dressing. Make sure to check on them every 5-10 minutes, turning and basting often. Cook until chicken is done. If using tomatoes, stick them on the ends of the skewers about 5 minutes before taking the kabobs off the grill. Any longer and you'll lose them to the fire! Enjoy!
