    2 cups Old Fashioned Oatmeal
    1 cup Unsweetened Applesauce
    1 cup Pumpkin Puree
    2 Eggs
    2 Egg Whites
    1 cup Light Vanilla Soymilk

    1 cup Unbleached All Purpose Flour
    1/2 cup Whole Wheat Flour
    1/2 cup Organic Sucanat
    2 Tbsp Baking Powder
    2 tsp Baking Soda
    2 tsp Cinnamon
    2 tsp Pumpkin Pie Spice
    1 cup Golden Raisins (optional but included in Nutrition Facts)

    Raw Unsalted Pumpkin Seeds to sprinkle on top. (I used about 1.4oz estimating 5 seeds per muffin/85seeds per oz and this is included in Nutrition Facts)


Preheat oven to 375 and line muffin pan with liners or spray with nonstick spray.

First combine all wet ingredients.

Then combine all dry ingredients and make a well in the middle. Pour in wet ingredients and mix together. Then fold in raisins.

Fill Muffin Cups 2/3 of the way full and then sprinkle the top with pumpkin seeds. Bake for 15-20min until the tops are golden brown.

  • This is a family favorite. We use craisins instead of golden raisins and I add some flax and wheat germ. We eat these as snacks throughout the week. Great recipe! - 1/30/11

  • For all the cinnamon and pumpkin pie spice, these muffins seemed very bland. Unfortunately, the saltiness of the baking powder was overpowing! I did not add the golden raisins....perhaps that was that would have enhanced the flavor. My 3 yo and 5 yo boys seem to like these muffins, though. : ) - 9/22/10
