For a vegetarian version, use vegetable broth or water, eliminate the chicken breast and substitute chick peas for navy beans increasing to 1.5 cups. Ingredients

    2 cups chopped cooked chicken breast
    1 can Del Monte Diced Tomatoes with Garlic and Onion or Green Chilies
    1/2 cup chopped onion
    1/2 cup chopped red bell pepper
    1/2 cup chopped zucchini squash
    1 small carrot, peeled and chopped
    2 cloves of garlic minced
    1 cup fresh spinach, chopped
    1 jalapeno pepper, seeds and ribs removed, minced
    1 TB olive oil
    2-3 tsp ground cumin
    1 tsp ground oregano
    4 cups low sodium organic chicken or vegetable broth
    1 cup water
    cilantro & lime wedges for garnish

Directions

In stock pot, heat olive oil and saute onions, red bell pepper, jalapeno pepper, garlic and carrot until tender. Add cumin, oregano , chicken breast and tomatoes. Bring to a bowl, reduce heat and add water, zucchini and beans. Simmer for 10 minutes. Add spinach and simmer until spinach is wilted. Ladle into soup bowls and sprinkle with chopped cilantro. Serve immediately with lime wedges
