This warm, easy chicken and wile rice soup takes moments to prepare and warms the soul. This warm, easy chicken and wile rice soup takes moments to prepare and warms the soul.
Number of Servings: 8


    Roasting Chicken, bone and skin removed
    1 box Campbell's low sodium chicken broth (about 2 cups)
    1 box Rice a Roni Long Grain and Wild Rice
    1 pkg Bird's Eye Mixed Vegetables (Broccoli, Cauliflower, Carrots)
    2 cups Water
    1 teaspoon All Spice
    2 Bay leaves


HINT: Either season and roast your whole roasting chicken as directed, or (and this is the easier method) get a prepared, hot rotisserie chicken from the grocery store.

Separate chicken from the bone and use primarily the white meat. Combine all ingredients into a large boiling pot and simmer on medium-high heat until the rice is tender. Once rice is tender, lower head to medium and simmer for 30 minutes.

Makes approximately 8 1-cup servings.

  • The whole family loved it. I added some extra fresh veggies like carrots and celery. I also added a can of cream of chicken soup to thicken it a little. - 2/1/11
