Ingredients

6 medium potatoes
1 cup of milk
150 grams fresh muchrooms
6 oz lean smoked ham
1 medium onion
1 tbsp olive oil
salt, pepper, fresh parsley
Directions
makes about 6 medium bowls of soup servings
Chop potatoes to smaller pieces and boil them in salted water until cooked.
Chop ham, muchrooms and onion and fry them on the pan with olive oil, add salt and pepper.
Pour away some water from the potatoes (they should be about half-covered with water), and use hand blender to mash potatoes.
Add warmed milk (use warmed milk, as cold milk will turn soup colour to blueish) to mashed potatoes. Soup should creamy enogh, but not too thin. You can also use cream or sour cream, depending how much calories you are willing to take :)
Finally add fried mucrooms, onions and ham from the pan.
When serving the soup, garnish with chopped parsley.
