Ingredients

    half a Tablespoon of olive oil
    1 Tablespoon of minced garlic
    4 slices of a large onion, diced
    4 slices of a large tomato, diced
    half of a large pepper, cut to bite-size pieces
    4 medium mushrooms, diced
    2 Tablespoons of oregano
    half a Tablespoon of basil
    2 Trader Joe's turkey meatballs (optional)

Directions

Makes 1 serving (ingredients can be multiplied for multiple servings, of course)

Heat olive oil and garlic over medium heat in large skillet. When garlic begins to cook, add onion and cook until pieces become somewhat see-through. Add tomato and let cook.

If you're going to use the meatballs in this recipe, now is a good time to heat them in the microwave while tomato is cooking. Nuke for 4 to 5 minutes, remove, and dice into small pieces.

Add pepper and mushroom to skillet with garlic, onion, and tomato. Mix thoroughly and season with oregano and basil. Add diced meatball and mix again. Allow to simmer for a minute or two.

Turn off heat and transfer to plate. Eat and enjoy!
