This is a great salad to have in the summer as a meal. It's both filling and delicious! The apple really brings out different flavors and the toasted walnuts give it great texture! Give it a try! Ingredients

    4 oz Asian Salad Mix or Dark Greens
    40g (or about 2Tbsp) Craisins
    1/2 a apple (I prefer Granny Smith), thinly sliced
    1/2 a pear, thinly sliced
    60g (or 1/2 cup) Walnuts (I toast them for 2 minutes on the stove first)
    2oz Goat Cheese, crumbled or cubed
    4 Tbsp Light Balsamic Vinaigrette

Directions

Simply mix the salad greens in a large bowl with the craisins, apple and pear slices, walnuts and goat cheese. Pour in the dressing and mix thoroughly. Let it marinate while you set the table and enjoy! I make enough for the two of us plus extra, hence the 3 servings, easily double it for a dinner for four!
