Ingredients

    2 4-6 oz salmon fillets
    3/4 square matzo, broken into pieces
    1 tablespoon fresh snipped dill
    1/4 tsp salt
    1/4 tsp pepper
    1 tbsp olive oil
    cooking spray
    lemon wedges (optional)

Directions

Preheat oven to 450. Coat an ovenproof dish with cooking spray, set aside. Place matzo, dill, salt, and pepper in a food processor or blender. Pulse 3-4 times or until matzo crumbles. Pour mixture in a shallow dish or bowl. Brush salmon with oil, dredge in matzo mixture until well-coated. Place salmon fillets in the ovenproof dish, and drizzle with remaining olive oil. Bake fish, uncovered, 10-12 minutes or until salmon flakes easily with a fork. Serve with lemon wedges.

Serves 2.
