Introduction

This makes a great alternative to tomato sauce for pizza and can be made with either rice milk or regular milk. If using regular milk you will have to adjust to nutritional information. As well, you'll need to add a bit of sweetner ie. sugar, maple syrup, honey. If you want this sauce to be garlicky, then add a tsp of minced garlic when you are melting the butter.

My favorite toppings for this pizza sauce are stir-fried chicken and broccali or roasted veggies. I usually top it with either mozzarella cheese or goat's cheese.

Ingredients

    2 T butter or oil
    2 T flour
    1 c rice milk or regular milk

Directions

Heat butter over medium heat in a heavy pot. Once butter is melted and hot, sprinkle in flour, stirring constantly with a whisk. Let cook for about a minute, stirring frequently. Gradually add rice milk, again stirring constantly. Continue cooking on a low heat until mixture thickens. If it thickens too much, add a bit more rice milk and continue stirring. If it's too thin, roll a tsp of butter in flour and add to the mixture, stirring vigourously. Remove from heat when desired thickeness has been reached.

Makes enough sauce for one large (16in) pizza.
