Introduction

Small and spicy, these are delicious with Tomato Salsa and steamed rice. Small and spicy, these are delicious with Tomato Salsa and steamed rice.

Ingredients

    Ground beef, lean, 16 oz
    Bread, 4 slices made into crumbs
    Egg, 1 large
    Onions, raw, 1 large finely chopped
    Parsley, flat Italian is best, 1 cup chopped
    Oregano, ground, 1 tsp or small handful of fresh leaves
    Monterey or Paremsan Cheese, .5 cup, diced
    Tobasco sauce, 2 dashes

Directions

Finely chop the bread slices, onion, parsley, oregano and cheese in a food processor and dump into a large bowl. Add the ground beef, the egg, hot sauce, salt and pepper and either stir or use your hands to mix well.
Line a large baking dish with parchment paper, wet your hands, and taking a heaping tablespoon at a time, lightly form small patties. Place these touching to cover the bottom of the dish. Bake at 400 F for about 25 minutes. Allow to rest for a few minutes to reabsorb the juices.
