Ingredients

    1 Large Can of Tomatoes
    2 Zucchini, sliced
    1 Medium Eggplant, cut in 1" cubes
    1 Medium Onion, chopped
    Garlic, 3 cloves
    Peppers, sweet, red, fresh, 1 large, chopped
    Olive Oil, 2 tbsp
    Basil, 1 tsp
    Herbs de Provence, 1 tbsp
    Salt, 1/2 tsp
    Pepper, black, 1/4 tsp

Directions

Sauteé all the vegetable in the olive oil.. add the spices and simmer for 1 hour. Makes 5 servings of 1 1/4 cup. Serve over rice if desired.
