Introduction

I LOVE LOVE LOVE Drew's All Natural Organic salsa, and I've been trying to replicate it for quite some time. I finally came up with a recipe (by combining many different ones) that is very similar in taste and just as delicious! I LOVE LOVE LOVE Drew's All Natural Organic salsa, and I've been trying to replicate it for quite some time. I finally came up with a recipe (by combining many different ones) that is very similar in taste and just as delicious!

Ingredients

    1 large can whole stewed tomatoes
    1 jalapeno, prepared how you like it for spiciness and finely minced
    1/2 medium white onion, minced (I use the FP)
    3 cloves garlic, press in garlic press or finely mince
    2 tbsp Cider Vinegar
    2-3 tsp chili powder (start with 2, then add more to taste)
    1-2 tsp cumin (start with 1, then add more to taste)
    appx 1/2 tsp lime juice
    1/2 cup fresh cilantro (not packed), minced finely
    freshly ground sea salt and freshly cracked pepper, to taste

Directions

Remove whole tomatoes from can and place in food processor with jalapeno. Run FP until tomatoes are nicely diced - almost pureed but not quite (or until they reach a consistency that you like in your salsa).

Place tomatoes in medium sauce-pan with all remaining ingredients but salt and pepper. Simmer 10 minutes, then stir in salt and pepper (in this recipe, the fresh pepper really makes a wonderful difference, if you have it available!). Taste and adjust seasonings and serve! This salsa is really great warm, but just as good chilled!! Enjoy!
