Ingredients

    1/2 onion, thinly sliced
    1 clove garlic
    1 tbsp. olive oil
    1/2 cup sliced mushrooms
    1 cup fresh spinach (packed)
    1 tbsp. lemon juice
    1/2 ounce (2 tbsp.) shredded parmesan cheese

Directions

Saute onions and garlic in olive oil until soft. Add mushroooms and cook until soft. Add spinach. Toss well and saute very briefly. Sprinkle with lemon juice and parmesan cheese. Serve hot.
Makes 2 servings.

    Yes, I would change the title to vegetarian as it is not vegan with the cheese. - 4/4/09

    Sorry-this recipe is NOT vegan, as any sort of dairy is not allowed in a vegan diet. There are vegan versions of traditional parmesan cheese, but none that I know of that you can shred (all of the commercial ones come in a can and homemade versions aren't shreddable). - 3/31/09

    Sorry for the mistake, thank you for your comment; I have edited my recipe to classify the recipe as vegetarian, rather than vegan.
