Introduction

This is a yummy dish that you can cut the fat out by using plain yogurt instead of sour cream. It still tastes great. Number of Servings: 6

Ingredients

    1 12 oz box whole wheat Rotini
    2 TBSP Olive Oil
    12 oz medium frozen shrimp, peeled, deveined and cooked
    2-3 cloves garlic, slivered
    2 med zucchini halved and sliced thick
    1 red bell pepper cut in to thin strips
    1 14 oz can of diced tomatoes, drained (or 2 fresh, diced)
    1/2 c water
    1 TBSP fresh dill
    1/4 light sour cream (or plain yogurt)
    4 oz feta cheese, crumbled

Directions

cook pasta according to package
heat oil in large skillet. Add shrimp and cook 2-3 min until done; remove and hold warm
Add garlic, zucchini and pepper, cook and stir until tender
Add tomatoes, water, and dill
Bring to a boil, then reduce heat and simmer for 5 min
Remove frm heat, stir in sour cream and feta
Add shrimp and pasta, mix well and serve immediately
