Introduction
I made this side dish from Eat Clean Diet by Tosca Reno with few modifications. I made this side dish from Eat Clean Diet by Tosca Reno with few modifications.Number of Servings: 8
Ingredients

1 can of chicken broth 98% fat free + 3 cups of boiled water.
2 cups of brown rice
1/2 onion
3 tbsp of virgin olive oil
1/2 cup fresh parsley
4 roma tomatoes
Directions
Cut tomatoes (coarse) and bake at 400F for 12-15 min. Saute shopped onion in 1 tbsp of olive oil. Add 2 cups of brown rice and 2 tbsp olive oil into onion mixture. Saute about 3-5 min while slightly stirring it. Add chicken broth and boiled water to the rice/onion mixture and bring to boil. reduce to simmer and add tomatoes. Cover and leave for 35-40 min checking periodically. This dish could be cooked in the oven as well as stove top. Enjoy. Good stuff.
