Ingredients

    *1 cup unbleached all purpose flour
    * 3/4 cup dark brown sugar
    * 3 tablespoons granulated sugar
    *1 1/2 tablespoons ground cinnamon
    * 3/4 teaspoon ground ginger
    * 1/4 teaspoon ground nutmeg
    * 1/2 teaspoon baking soda
    * 1/4 teaspoon baking powder
    * 1/2 teaspoon salt
    * 1/2 old fashioned oats
    * 3/4 cup applesauce
    * 2 large eggs
    * 1 teaspoon pure vanilla extract
    *1 cup grated zucchini

Directions

Preheat the oven to 350 degrees. Spray non-stick spary onto a bread pan and set aside.

In a large mixing bowl stir together the dry ingredients. When combined mix in the oats.

In a seperate bowl mix the wet ingredients (including the zucchini). When mixed combine the dry and wet ingredints until they are blended.

Scrape the batter into the prepared pan. Bake for 50 minutes to an hour. Cool in the pan for 10 minutes before removing from the pan Let the bread cool for atleast 30 minutes before slicing.

Makes approximately 7 servings.
