Introduction

Non-traditional stirfry. Although I love the others, I found this a quick & easy way to add to the types of veggies I eat and have learned to love. Non-traditional stirfry. Although I love the others, I found this a quick & easy way to add to the types of veggies I eat and have learned to love.
Number of Servings: 4

Ingredients

    3 Tbsp. Olive Oil (May use whatever type you like)
    2 Cups (usually 1 whole large) quartered slices zucchini
    2 Cups (usually 1 whole large) sliced yellow or summer squash
    1 thinly sliced onion
    12 oz bag of shrimp-raw or precooked-salad shrimp are alright
    1 chopped clove garlic (may use 1 tsp garlic powder)

Directions

Put olive oil in large skillet. Add onions & garlic first then all other veggies stirring to cook evenly. Season with garlic powder if not using fresh and you may use a pinch of salt if not restricted. Add shrimp last. If shrimp is pre-cooked you only have to cook long enough to heat shrimp. Makes 2 large servings if only dish served. With garlic bread and/or lite salad serves 4.
