Ingredients

* 3 Chicken and apple sausages
* 3 Yukon Gold Potatoes (about 5 oz per potato = 15 oz total/425.25 grams)
* 300 grams/10.5 oz zuchini
* 3 medium tomatoes, cut into wedges
* approx. 3 tablespoons of oilve oil.
Directions
Cut the tomatoes into wedges and set aside
Grill sausages, then cuts into rounds and set aside to cool
Cut the potatoes in 1/4 inch thick rounds and cut the zucchini lengthwise into four long "boats". Brush vegetables with olive oil.
Grill potatoes until tender; grill zucchini boats until they have nice grill marks and the zucchini is soft-ish. When veggies are cooked, allow to cool. Chop zucchini boats into chunks.
Toss the sausages and veggies together in a bowl. Add the tomato wedges.Serve cold.
*OPTION= I like to dress my portion with some garlic flax oil and balsamic vinegar, but any dressing you enjoy would work.
