Introduction

Ingredients

    1/2 cup applesauce
    1 cup Splenda
    2 eggs
    2 medium bananas, mashed
    1 tsp. vanilla

    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    2 cups flour

    1 cup semi-sweet chocolate chips

Directions

Mix applesauce, Splenda, eggs, bananas and vanilla in a mixer until smooth. Combine baking powder, baking soda, salt and flour in separate bowl. Slowly add dry ingredients to wet ingredients in mixer and mix until smooth. Stir in chocolate chips.

Spray mini-muffin pans with Pam spray and fill each 3/4 full. Bake at 350 degrees for 11-12 minutes until toothpick comes out clean. Cool in pan for 5 minutes and remove to wire rack.

Makes 36 mini-muffins.
