Ingredients

    2 lbs. lean ground beef
    1/2 tsp. garlic powder
    1/2 tsp. ground cumin
    1 pinch crushed oregano
    1 pinch chopped cilantro
    3 TBS. oleo
    1 cup diced fresh tomatoes
    1/2 cup green chili peppers, diced
    4 cloves garlic, chopped
    2 medium chopped onions
    1 lb. green cabbage, chopped
    1 medium zucchini, chopped
    1/2 bunch cilantro, chopped
    3 qts. beef broth
    salt and pepper to taste

Directions

In mixing bowl, mix beef, garlic, cumin and cilantro. Shape into 1 oz. meatballs.

In a large pot, saute in oleo the next 7 ingredients. Add broth. Just before broth comes to a boil, add the meatballs, one at a time. Add salt and pepper to taste. Simmer for 1 hour. At serving, may be topped with more fresh cilantro.

    This was excellent. I didn't change a thing, except I forgot the peppers. The fresh cilantro was one of the best parts. It's great without the peppers, but I can imagine how much better it would be had I remembered to add them! - 10/2/11

    Is the sodium off on this recipe? Do thay make a beef broth with NO sodium? Even the low sodium swanson beef broth, it would still be 400 mg per serving. Correct me if I am wrong. If there is a no sodium broth let me know I will buy it by the case! Will be trying this recipe tonight. - 9/9/11
