Introduction

My take on a sloppy joe. My husband loves this version and says it has the taste of a manwich but much better! Cost effective and a lot healthier. Add a whole grain sandwich bread, I highly recommend Arnold's sandwich thins. It will add 100 calories but also some fiber. Pair with a nice green salad. My take on a sloppy joe. Ingredients

    1 lb ground turkey
    1 cup diced bell pepper
    1 cup diced onion (or onion powder will do)
    1 cup fresh mushrooms finely chopped
    2 cloves or 2 tsp minced garlic(garlic powder will do as well)
    2 tbsp extra virgin olive oil, or twice around the pan(you could use a spray to cut down even more calories)
    2 tbsp balsamic vinegar
    1 cup bbq sauce (whichever kind you like but look for the lowest calorie and fat content)

Directions

Heat a pan over medium- high heat. Add the olive oil, onion and garlic. Cook until just soft, don't let burn. Add the ground turkey and cook until brown. Add s&p to taste. Add the diced bell pepper (any colors will do) and mushrooms. Cook for about 5 more minutes. Add the balsamic and bbq sauce and cook until heated through and nicely mixed.
Serve on multigrain bread with a nice salad.
