Introduction

I could not seem to find a peanut butter cookie recipe that made sense and tasted good too, so I created my own and it is one of the best I have ever made! Ingredients

    1 cup packed brown sugar
    2.5 tablespoons butter
    1/2 cup granulated sugar
    1.25 cup peanut butter (reduced fat or other)
    2 egg whites (read recipe before adding egg whites!)
    1 cup flour
    1 teaspoon vanilla extract
    1 teaspoon baking powder

Directions

Mix together in a large bowl: butter, brown sugar and white sugar, making sure to blend the butter completely with the sugar.
Add a heaping cup of peanut butter (your preference on whether or not you use reduced fat or other variety) stir so batter is smooth.
Add 1 of the egg whites first and blend so batter is sticky, then add the flour . After flour is added, mix in the vanilla and baking powder, finish by mixing in the last egg white until batter is smooth, & slightly sticky.

Shape small balls of batter and place on ungreased cookie sheet, flatten with a fork to create that trademark peanut butter cookie top.

Bake at 350 degrees for 10 minutes
*watch cookies in last 3 minutes or so, they get brown really fast!

Makes, depending on the size of your cookie, about 45 1.5-2 inch cookies
