Introduction

Number of Servings: 12

Ingredients

    1 c chopped onion
    1 c chopped green pepper
    28oz can diced tomatoes
    1 c diced mushrooms
    1 small can sliced olives (drained)
    1 Tbsp oregano
    1 lb browned ground turkey
    12 oz whole wheat spaghetti noodles
    10 oz can cream of mushroom soup
    1/4 c water

Directions

Cook noodles according to package. Meanwhile, in a large skillet saute onion, pepper, and mushroom until tender. Add tomatoes, olives, and oregano. Add ground turkey. Simmer uncovered for ten minutes.
Place half of the spaghetti in a greased 13x9x2 baking dish. Top with half the veggie mix. Sprinkle with half of the cheese. Repeat noodle and veggie layers.
Mix water and soup together until smooth. Pour over casserole. Top with remaining cheese.
Bake uncovered at 350 until heated through (about 15 minutes).

    Good
    My hubby really enjoyed this but my kids didn't like it as much. I think a tomato based sauce would help out with the flavor. Will try that next time instead of the mushroom soup. - 1/19/10
