Ingredients

10 6" tortilla
1 10 oz package of frozen spinach
1 12 oz fat free ricotta cheese
1 Large Egg
1 19 oz Jar of Your Favorite Salsa
2 cups Shredded Mild Cheddar Cheese
Directions
Preheat oven to 375.
Microwave spinach according to package instructions.
In a small bowl combined spinach, one container of fat-free ricotta cheese & egg.
Microwave tortilla according to package instruction - generally 10 sec per tortilla to soften.
Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour your favorite salsa over the top, and sprinkle the top with shredded cheddar cheese.
Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.
