Ingredients

    1 Can Black Beans - rinsed & drained
    1 Can of Shoe Peg Corn
    1 can of Rotel - drained
    1 Medium Purple Onion Chopped
    Sprig of fresh Colantro
    1/4 tsp crushed garlic (I use minced)
    3-4 tbspn of Red Wine Vinegar

Directions

Stir all the ingrediants together in a bowl & chill for an hour or so
