Ingredients

*Crust:
3 tbsp. butter
12 whole wheat cinnamon graham crackers, crushed
*Cake:
1 cup part skim ricotta cheese
4 oz. neufchatel cheese (light cream cheese)
4 oz. plain non-fat greek yogurt
2 tbsp. raw honey
1 tsp. vanilla
1 cup fresh berries
Directions
Melt the butter and combine it with the graham cracker crumbs. Press this mixture in the bottom of an 8 or 9 inch round pan. Place pan in the fridge for at least 10 minutes while preparing the cake.
Whip the ricotta cheese, cream cheese, and yogurt together with the honey and vanilla until smooth and creamy.
Gently spread the cake layer over the crust, using an offset spatula or butter knife to smooth out the top. Sprinkle the berries evenly over the cake.
Refrigerate for at least one hour before cutting and serving.
Makes 10 servings.
