Introduction

A lowfat, tasty muffin that can be made with virtually any fruit or nut! A lowfat, tasty muffin that can be made with virtually any fruit or nut!

Ingredients

    1 C. oat bran
    3/4 C. white flour
    3/4 C. whole wheat flour
    1/3 C. sugar
    1 T. baking powder
    1/4 tsp. salt
    3/4 C. coarsely chopped cranberries
    4 or 5 dates, coarsely chopped
    3/4 C. coarsely chopped walnuts
    1 C. milk (2% used in calculations)
    1/2 C. unsweetened applesauce
    1 tsp. vanilla
    1 egg

Directions

Preheat oven to 350 degrees. Line a muffin tin with paper liners, or spray with cooking spray. Combine dry ingredients, set aside. Beat egg, then add milk, vanilla, and applesauce. Make a well in the dry ingredients, pour in wet ingredients and mix just until moistened. Fold in cranberries, walnuts and dates (the dates add a little extra sweetness!) Use an ice cream scoop to scoop batter into muffin tin. Bake for 20 minutes until a toothpick inserted into a muffin comes out clean. If paper liners are used, it's best to let the muffins cool completely before serving - it makes removing the liners much easier!
