Ingredients

    1 lb. skinless, boneless thin sliced chicken breasts
    2 Tbsp. olive oil
    1/2 cup dry white wine (I use Pino Grigio) *
    1/2 cup fresh or canned sliced mushrooms, optional
    1/4 cup lemon juice
    2 Tbsp. capers, drained & rinsed
    Lemon slices & fresh parsley for garnish, optional

    * Chicken broth may be substituted for wine. Please note that nutrtional date was based on recipe prepared with wine.

Directions

Trim any fat from cutlets & dredge in flour. Coat large, non stick skillet with non-stick spray (like Pam) and add olive oil. Place over medium heat and allow time to heat pan. Add chicken slices and cook 3 minutes on each side. Remove from pan, drain & pat dry with paper towel. Transfer chicken to serving platter. Set aside; keep warm.
Add wine & mushrooms, stirring well to scrape up any brown bits from the bottom of the skillet. Cook over medium high heat, stirring occasionally until mixture is
reduced by half. Pour sauce over chicken. If desired, garnish with thin lemon slices and fresh parsley.
Makes 4 servings. Time to prepare: about 15 minutes
