Ingredients

1/2 cup lowfat margarine
1 1/2 cup all purpose flour ( I used whole wheat flour)
1 teaspoon baking powder
1/8 teaspoon salt
2 tablespoons sugar
1 tablespoon cinnamon
2 eggs
1 1/2 cups lowfat milk
1 teaspoon vanilla extract
1 cup finely chopped walnuts (optional)
nonstick cooking spray
Directions
Melt margarine in the microwave. In a medium bowl, combine dry ingredients. in another bowl, whisk the eggs lightly and stir in the milk, vanilla extract and melted margarine. Stir the liquid ingredients into the dry ingredients and mix until just blended.
Preheat grill on High. When the green light goes off, coat with spray. Spoon about 1/2 cup of batter on each side of the bottom Waffle Plate and close the lid. Cook the waffles for 3 1/2 minutes. Check the waffles and continue cooking to a golden brown. Repeat with remaining batter. Keep warm in the oven or serve immediately with syrup or honey.
Makes about 8 waffles.
