Introduction
This tastes just like apple cobbler! My husband has no idea that it is made with zuchinni or that it has xylitol in it and not sugar! He wouldn't eat it otherwise....haha. Ingredients

Crust:
*all-purpose flout , 4 cups
*xylitol, 2 cups
Cinnamon, ground, .1/2 tsp
Salt, 1/2 tsp
*Margarine, 1 1/2 cup
Filling:
*Zuchinni 8-10 cups
*Lemon Juice, 2/3 cup
*xylitol, 1 cup
Cinnamon, ground, 1 tsp
Nutmeg, ground, 1/2 tsp
Directions

In a bowl, combine flour, xylitol, cinnamon and salt. Cut in margarine until crumbly; reserve 3 cups. Pat remaining crumb mixture into the bottom of a greased 13x9x2 inch pan. Bake at 375* for 12 min.

While this is baking, place zuchinni and lemon juice in a saucepan and bring to a boil. Reduce heat, cover and cook for 6-8 minutes or until zuchinni is crisp-tender. Add xylitol, cinnamon, and nutmeg. Cover and simmer for 5 minutes.
3.
Spoon over crust. Sprinkle with the remaining crust mixture and bake at 375* for 40-45 minutes.
Yield: 24 servings
Note: you can use sugar if you prefer......or you can use part sugar/part xylitol.....it can be substituted 1:1. Tastes the same. The only thing you can't do with xylitol is use it in breads and stuff that needs to rise. This stuff is excellent for your teeth and actually inhibits cavities!
