Introduction

This EASY Panzanella Salad has Italian flavored deli roast beef and baked pita chips for the "bread" portion of the salad. It is absolutely wonderful! This EASY Panzanella Salad has Italian flavored deli roast beef and baked pita chips for the "bread" portion of the salad. It is absolutely wonderful!
Number of Servings: 4

Ingredients

    4 oz. Athenos Baked Pita Chips (crunched and broken down a little bit)
    2 large tomatoes, chopped
    1/2 English cucumber, chopped
    1 small red or sweet onion, chopped
    3 Tbs balsamic vinegar
    1 Tbs olive oil
    1/4 tsp pepper
    1/2 pound thinly sliced Italian flavored roast beef, cut into strips

Directions

Combine all ingredients together in a large bowl. Toss well and let set 10 min. so that the pita chips absorb some of the juices. Then serve.

***You can add the following if you'd like (I didn't have them when making the recipe)...
1/4 cup chopped fresh mint or basil
1 Tbs drained bapers
