Ingredients

1/3 cup sugar
3 beaten eggs
1.5 cups milk
1/3 cup sugar
1 teaspoon vanilla
Directions
Carmelize 1/3 cup of sugar by shaking in a heavy 8 inch pan over an open flame until golden brown and completely melted. Quickly coat four 6 oz. custard dishes with the mixture which has been divided evenly between them. After Swirling
to coat the dishes. Let stand 10 minutes to cool while you combine the remaining ingredients,
Add custard mixture to the coated dishes. Place in a 9X9 inch pan. Fill pan with boiling water to the halfway part of the dishes. Place in a 325 degree oven for 30 minutes. Cool. Cover and refrigerate. To serve, loosen the flan with a knife run around the edges of the dish. Invert on a serving plate and serve. The caramel will run down the sides to partially coat the custard.
