Introduction

This is a healthy, low cal, individual serving of a mexican 'pizza'. For vegetarians who don't do dairy, you can always substitute kraft shredded cheddar for veggie shreds.

*NOTE* If the idea of warm guac is unappealing to you (it was to me at first but I Thought I"d give it a shot and really enjoyed) then you can make the pizza as is and dip it in guacamole after it's cooked. I like it fine either way.

Ingredients

    1 whole wheat pita
    2 tbls (or more to taste) of guacamole (homemade or store bought, I make my own fresh and use it right away for this dish)
    1 tbls (or more to taste) of a smooth taco sauce
    .25 cup of seasoned or plain black beans
    .25 cup of shredded cheddar cheese
    a few slices of jalapeno (if you can handle the spice)

Directions

Makes one single serving Mexican guacamole pizza.

Take one whole wheat 6 inch pita, spread with the guacamole, then spread thin layer of smooth taco sauce over top, sprinkle with .25 cup (Seasoned to taste, with either chili powder, onion powder, salt, cumin, etc or plain, depending on how spicy you like your dish) black beans, add a few jalapeno slices then cover in .25 cup of shredded cheddar cheese.

It takes about 5 minutes to prepare and then just pop it in the oven for about 5 minutes on 400 degrees (be sure to pre-heat) to let the pita crisp and the cheese melt. Keep an eye on it though, I use a toaster oven for this and smaller meals so it really depends on how crunchy you like your crust and how browned or melty you like your cheese.
