    3 cups pumpkin, peeled and cut into 2" pieces
    2 medium carrots, cut on the diagonal in 1" pieces
    2 red or orange bell peppers, cut into 2" pieces
    1 large onion, cut into quarters
    2 tsp olive oil
    1/2 tsp red chili flakes
    salt & pepper to taste


Place all in a baking dish. Toss together. Bake uncovered in 375 degree oven for 45 minutes, stirring once during the baking process.
