Introduction
You can substitute vegetable broth or beef broth (for 2 boullion cubes and 2 cups of water.) This recipe does not need to be blended, but it is more appealing to kids when it is. Ingredients

Olive Oil, 2 tsp
Garlic, 1 clove, minced
Onion, 1 small, chopped
Carrots, raw, 1 medium, chopped
Red Lentils, 1 cup
beef boullion cube, 2
Red Ripe Tomatoes, 1.75 cup, peeled and diced
Directions
Rinse lentils and remove any that look bad. Drain.
Heat oil in sauce pan. Add in garlic, onion, and carrots. Saute until onions just begin to turn clear. Add in the lentils and saute for 2-3 minutes.
Add 4 cups of water and boullion (or broth.) Bring to a boil. Reduce heat and simmer until lentils start to become soft.
Remove peels from tomatoes and dice. Add tomatoes and continue to simmer until lentils are very soft. Add salt to taste. You can eat the soup like this, but I like to use a hand blender to make it smooth.
Serve with a dollop of sour cream (not part of nutrition information.)
Makes 12, 1/2 cup servings.
