Introduction

Technically, this isn't hummus, because there's no tahini in it, but it's a nice smooth spread/dip, and makes a good sandwich, wrap, or cracker topping. I like it with Greek flatbread. Ingredients

    2 cans (3 cups) cooked chickpeas (garbanzos); reserve some of the liquid
    juice of 1 lemon
    2-3 cloves garlic
    1/2 tsp. salt

Directions

Blend all together, using enough of the chickpea liquid to make it the texture you like it. Makes four 3/4-cup servings.

    We enjoyed this very much! But I think you forgot to include the amount of roasted red peppers. I threw in the whole 4.25 oz jar, and it was delicious. - 6/6/10
